Zesty Red Pepper and Green Onion Cornbread

You will need:

One ONEearth Spicy/Creole Cornbread Mix
Two large eggs
1/2 cup melted Butter
1/3 Cup of Corn Niblets
1/3 Cup of very finely chopped Red Pepper
1/4 Cup of finely chopped Green Onions

Instructions for the ONEearth Spicy/Creole Cornbread:

  1. Preheat oven to 325 degrees F and grease the bottom and sides of a 9” by 9” baking pan.
  2. In a large mixing bowl, combine the Cornbread Mix, two large eggs and 95 grams (1/2 cup) of melted butter.
  3. Do not over blend when adding the pumpkin seeds and the spice packet; carefully fold in the corn, red pepper, and the green onion.  If the mixture seems dry, add one tablespoon of cool water.
  4. Spoon into a well-greased baking pan, and spread evenly.
  5. Bake for twenty to twenty-two minutes and then check every minute or two until firm to touch.

Valentine Cranberry Quinoa Bliss Squares

You will need:

ONEearth Quinoa Crunch Chocolate Square Mix
Two large eggs
1/4 cup melted butter
1/3 cup vegetable oil
1/2 cup dark chocolate chips
1 cup chopped dried cranberries

Icing:

½ cup dark chocolate chips
3 tablespoons melted butter
3 tablespoons unsweetened cocoa
2 tablespoons ONEearth Coconut Sugar

Instructions for the ONEearth Quinoa Crunch Chocolate Square

  1. Soak dried cranberries for 20 minutes in cool water, drain and chop finely.
  2. Preheat oven to 325 degrees F and grease the bottom and side of a 9 by 11 inch baking pan.
  3. In a large mixing bowl, combine the ONEearth Quinoa Crunch Chocolate Square Mix, two large eggs, 1/4 cup melted butter, 1/3 cup vegetable oil, 1/2 cup dark chocolate chips and 1 cup soaked and chopped cranberries.
  4. Do not over blend, mixing only until ingredients are moist.
  5. Spoon into well greased baking pan, and spread evenly.
  6. Bake for approximately 26 to 28 minutes or until firm to touch.

Please remember oven temperatures can vary.

Icing:

  1.  In a microwave safe bowl or double boiler, combine ½ cup dark chocolate chips, 3 tablespoons melted butter, 3 tablespoons of unsweetened cocoa and 2 tablespoons coconut sugar.
  2. If using a microwave, heat in short increments, 30 seconds maximum stirring often; if using a double boiler keep on low to medium heat and stir frequently.
  3. Heat until the chocolate is melted, and all of the ingredients are well blended with no visible grains of sugar.
  4. Pour hot icing over cooled Square while it is still in the baking pan; use a rubber spatula to gently spread the icing.
Let the icing cool, set until firm and no longer sticky, prior to cutting.  Enjoy.
