Coconut sugar is made from the nectar of the coconut tree (cocos nucifera). It is simply processed, yielding a clean, pure product. One of the best sugars you can use, coconut sugar has a low Glycemic Index (GI) of 35 compared to traditional sweeteners such as refined table sugar (GI 80), pasteurized honey (GI 75), raw sugar (GI 65), and evaporated cane juice (GI 55).

Organic Coconut Sugar Glycemic Index

The Glycemic Index (GI) is a scale that ranks food rich in carbohydrates by how they affect blood sugar levels in the body compared to glucose. The GI of glucose is 100. This numerical system measures how much of a rise (glycemic response) in circulating blood sugar a carbohydrate triggers – the higher the number, the greater the blood sugar response. A low GI food will cause a small rise, while a high GI food such as a boiled potato will trigger a dramatic spike. A GI of 70 or more is considered high, while a GI from 56 to 69 is medium, and a GI of 55 or less is rated as low. ONEEarth’s Coconut Sugar would be considered as a low GI food due to its having a GI of 35.

The Glycemic Load (GL) assesses the impact of carbohydrate consumption that takes the glycemic index into consideration.  The GI value tells us how fast a carbohydrate converts into sugar but it does not tell us how much of it is in a food.  The glycemic load, though, takes into consideration both the impact and the amount. Generally, foods that have a low GI usually have a low GL.

For coconut sugar, with its GI of 35, has a corresponding GL of 1.4.
